It is a soft, raw paste water buffalo cheese with a washed rind similar to the typical Lombard stracchino soft cheese. It is produced using pasteurised buffalo milk only. Minimum ageing of 30 days. The rind may be slightly moist, is orange in colour, and at times has greyish streaks. The middle part of the paste is fatty and compact and smells of cooked milk and herbs, whereas below the rind it is softer and smells of woodland undergrowth. The flavour is full to the mouth due to the fattiness of the paste, but the aromatic freshness is tempting.
