Bloomy rind buffalo cheese

Pen Bu’ is a small cheese disc made with 100% whole buffalo milk and covered with a thin white coating (bloomy rind). It is delicate to sight, aromatic to smell and rich in taste. The structure is initially compact and tends to become creamy with ageing, a phenomenon that also causes an increase in intensity of fragrance, aromas and flavours.
