Cologno Muscat

Cheese with an intense and savory flavor

The typical greyish rind is slightly moist as a result of contact with the Muscat grape marc from the Eligio Magri winery, which also visually characterises this cheese.

The flavour is intense, savoury and pleasantly fatty, never spicy, with aromatic notes of nuts.  Furthermore, the grape marc residues, with a marked sugar content, give the cheese an unexpected and surprisingly sweet taste, which together with the aromatic notes of Muscat, turn it into a sort of dessert. The raw milk processing gives the paste an initially more buttery texture. It then becomes more crumbly with ageing, a phenomenon that promotes a more immediate perception of the flavours and a harmonious development of the aromas deriving from ageing in the marc.
